Position Overview
We are seeking an experienced and talented Chef de Partie (CDP) specializing in Rajasthani cuisine to join our culinary team. The ideal candidate will bring expertise in authentic Rajasthani cooking techniques, recipes, and traditions while maintaining the highest standards of food quality and presentation.
Key Responsibilities
Lead and supervise the preparation of authentic Rajasthani dishes, ensuring consistency in taste, quality, and presentation according to hotel standards
Manage a section of the kitchen, including inventory management, staff supervision, and maintaining hygiene standards
Create and update Rajasthani menu items, incorporating both traditional recipes and innovative interpretations
Train and mentor junior kitchen staff in Rajasthani cooking techniques, spice blending, and regional cooking methods
Ensure proper storage and handling of ingredients specific to Rajasthani cuisine
Maintain kitchen equipment and ensure compliance with food safety regulations
Collaborate with other section chefs for menu planning and special events
Assist the Head Chef in cost control and minimizing food waste
Required Qualifications
Minimum 3-5 years of experience as a CDP or equivalent position, with specific expertise in Rajasthani cuisine
Diploma in Culinary Arts or related field
In-depth knowledge of Rajasthani cooking techniques, spices, and traditional recipes
Strong understanding of kitchen operations and food safety regulations
Excellent leadership and team management skills
Ability to work in a fast-paced environment under pressure
Strong communication skills in English; knowledge of Hindi/Rajasthani is a plus
Technical Skills
Expert knowledge of Rajasthani cooking methods (soola, dum cooking, etc.)
Proficiency in preparing signature dishes like Dal Baati Churma, Laal Maas, Ker Sangri, and other regional specialties
Understanding of dietary restrictions and ability to modify recipes accordingly
Expertise in spice blending and marination techniques
Knowledge of modern kitchen equipment and technology
Working Hours
Full-time position with rotating shifts
Must be flexible to work weekends, holidays, and extended hours as required
